From source to glass: responsible solutions for everyone’s wellbeing

The hospitality sector has a naturally high demand for water: pools, wellness areas, lush gardens, and daily operations require volumes that are hard to imagine in everyday life.
For us, water is more than an essential resource – it is a central element, both visible and invisible, in every aspect of our operations.
 
This raises a crucial question: how can we provide the highest level of comfort for our guests while minimizing our environmental impact?
The answer goes beyond simply saving water. In fact, water is never truly consumed – it remains part of a continuous natural cycle.
That’s why we speak of water use rather than consumption: what truly matters is how we source it, treat it, and return it to nature, ensuring its quality is preserved for the future.


Conscious Water Management

Across our Resorts & Lodges, we have introduced numerous initiatives to promote mindful water management, such as:

  • collecting rainwater to irrigate our gardens,
  • creating natural meadows that require minimal irrigation,
  • operating in-house treatment plants in Tuscany and Sicily to ensure clean water is safely reintroduced into the aquifers.

 We also place great emphasis on reducing the use of chemicals. Sophisticated filtration systems keep our pool water crystal-clear with minimal product use, while for cleaning and laundry we choose eco-friendly, organic detergents in line with ADLER standards.
This ensures that once water has completed its cycle, it can safely return to the environment, naturally reintegrating into its course.

These are just a few examples of a commitment that goes far beyond direct water management and reflects our broader vision of sustainability.
In this article, however, we focus on one aspect that directly concerns our guests: drinking water.


From long supply chains to local sources

Until the end of 2023, we sourced our drinking water from external suppliers.
Glass bottles were delivered, emptied, collected, washed, or melted down – a complex cycle that not only required a significant amount of glass, but also generated high CO₂ emissions through transport and production.

In 2024, we embraced a completely new approach: using water from our own springs, carefully treated with state-of-the-art filtration systems.

Thanks to the pristine natural settings of our properties, we can now offer our guests exceptionally pure spring water in reusable glass bottles – still, sparkling, or lightly sparkling – always fresh and complimentary.

  • ADLER Spa Resort Thermae (Tuscany):
    Since February 2024, we have been drawing water from the Monte Amiata spring. Located on the volcanic massif of the same name, it provides naturally filtered, crystal-clear water long prized for its exceptional quality.

  • ADLER Spa Resort Dolomiti & Balance (Dolomites):
    The transition was completed in June 2024. Here we use water from the Cunfin spring, renowned for its remarkable softness and low mineral content – perfect for daily consumption.

  • ADLER Spa Resort Sicilia (Sicily):
    In September 2024, we introduced an advanced system to purify local aqueduct water through microfiltration, producing microbiologically pure, low-mineral, low-sodium water that meets the highest quality standards.

  • ADLER Lodges Alpe & Ritten (South Tyrol):
    Surrounded by breathtaking mountain landscapes, these lodges have always relied on fresh spring water, bottled on-site in glass bottles since opening.

 Since 2019, all our Resorts have also offered complimentary refills of guests’ personal bottles with spring water – a simple, sustainable service that has been met with great enthusiasm.
 
The Difference in Numbers

One year after the transition, we can measure the tangible impact of this initiative.
For our analysis, we collected and assessed the most relevant data, including:

  • the number of bottles distributed before and after the transition in restaurants, bars, Spa areas and minibars,
  • the amount of glass used, calculated by considering factors such as bottle size, weight, single-use vs reusable, and material density,
  • the average transport distances covered by our suppliers.

 Following the transition, our reliance on externally bottled water has been reduced to a minimum, limited to small quantities for minibars and a small reserve for restaurants and bars, used only upon explicit guest request.


Resort-Level Results

  • ADLER Dolomiti & Balance: glass reduced from 47 to 5 tons, bottles from 90,000 to 11,000, transported water from 60,000 to 6,000 litres (–90%).
  • ADLER Thermae (Tuscany): glass reduced from 60 to 6 tons, bottles from 110,000 to 15,000, transported water from 83,000 to 11,000 litres (–87%).
  • ADLER Sicilia: glass reduced from 52 to 2 tons, bottles from 116,000 to 5,000, transported water from 75,000 to 2,500 litres (–91%).

Overall Impact

One year after the full transition – comparing 2023 with 2024/25 – the impact is striking:

  • Glass transported: from 158.9 to 13.2 tons
  • Bottles: from 315,517 to 30,937 units
  • Water transported: from 218,147 to 20,183 litres

This represents a reduction of over 90% in glass, bottles and transport volumes.

A result that not only saves valuable resources but also significantly cuts CO₂ emissions.
Based on the overall data from all our Resorts, we estimate annual savings of around 41–43 tons of CO₂.

To illustrate these figures more tangibly:

  • every year we avoid transporting nearly 200,000 litres of water – equivalent to over 1,300 full bathtubs;
  • the CO₂ reduction corresponds to the emissions generated by driving roughly 293,000 kilometres, or more than seven times around the globe.

 These results show how a local choice can create global effects, making a concrete contribution to climate protection and the future of our planet.


Quality Without Compromise

The transition, especially in Tuscany and Sicily, was a significant challenge.
We did not want to simply provide tap water, but to guarantee an excellent standard through advanced filtration and purification systems ensuring microbiological safety and impeccable taste.
Of course, producing and sanitising bottles as well as operating the facilities requires resources, but the data clearly confirm that this choice has been the right one:

  • fewer transports,
  • reduced CO₂ emissions,
  • preservation of natural resources.

 By offering high-quality local water free of charge, we create a dual benefit: a concrete step for the environment and an exclusive service for our guests.
