A Taste of South Tyrol

Two dumpling recipes by Head Chef Denny Mair

Few dishes are as closely associated with South Tyrolean cuisine as the traditional dumpling. From time-honoured recipes to more contemporary variations, there are countless ways to enjoy this Alpine classic.
At ADLER Alpe, dumplings regularly take centre stage. Once a week, a selection is freshly prepared at the lunch buffet, right in front of our guests. And those who would like to try their hand at this South Tyrolean tradition can even shape their own dumplings before they are cooked.

For anyone wishing to bring a little taste of South Tyrol home, our Head Chef Denny Mair shares two of his recipes: beetroot dumplings and pressed cheese dumplings. Two very different flavours that work beautifully together, yet are just as delicious served individually on a bed of fresh lamb’s lettuce.
Here is how to make them:

Beetroot Dumplings

Ingredients for 4 people
300 g dumpling bread, cut into 1–1.5 cm cubes
150 g cooked beetroot, peeled
120 g mature cheese (Parmesan or South Tyrolean grey cheese)
4 eggs
2 onions, finely diced
Approx. 100 g milk
1 tbsp butter
Salt, pepper, cumin and a little finely chopped fresh parsley
200 g beetroot juice

Preparation
  • Finely dice the onions and gently sauté them in the butter without allowing them to brown.
  • Cut the beetroot into small pieces and blend thoroughly with the eggs until smooth. If you like, you can also fold a few small cubes of beetroot into the dumpling mixture for additional texture.
  • Place the bread in a large bowl. Add the mature cheese and seasonings.
  • Pour in the beetroot and egg mixture followed by the milk, then combine everything thoroughly. Adjust the seasoning if necessary, cover and leave to rest in the refrigerator for 1–2 hours. If the mixture becomes too firm, add a little more milk to keep the dumplings light and fluffy.
  • Bring a pot of salted water with a little beetroot juice to the boil. Add the dumplings and cook for 10–12 minutes.

Pressed Cheese Dumplings

Ingredients for 4 people
300 g dumpling bread, cut into 1–1.5 cm cubes
80 g Parmesan
80 g mountain cheese (Appenzeller or Ortler)
80 g South Tyrolean grey cheese
4 eggs
2 onions, finely diced
Approx. 200 g milk
1 tbsp butter
Salt, pepper and fresh chives

Preparation
  • Gently sauté the onions in the butter over a low heat without allowing them to brown.
  • Place the bread in a large bowl. Add the Parmesan and finely chopped grey cheese.
  • Lightly whisk the eggs.
  • Bring the milk to the boil and pour it over the mountain cheese. Blend until smooth. This gives the dumpling mixture a particularly light texture and a more intense flavour.
  • Add the warm milk and cheese mixture together with the whisked eggs to the bread and combine thoroughly.
  • Refrigerate the mixture for approximately 1–2 hours to allow the flavours to develop.
  • Bring the dumpling mixture back to room temperature. Shape it into evenly sized dumplings and gently flatten each one.
  • Lightly brown the dumplings in a little melted butter, then simmer them in hot water for approximately 10–12 minutes.

To serve
Sprinkle the finished dumplings with Parmesan and finish with brown butter before serving.

Chef’s tip
Always allow the dumpling mixture to return to room temperature before shaping. This makes it easier to judge the consistency and, if necessary, add a little more liquid. The result will be beautifully light and fluffy dumplings.
