Spring in Val d'Orcia: Nature, Flavors, and Adventure

The days are getting longer, the meadows are coloured with flowers and the air is filled with the spicy scents of wild herbs: it's spring in the Val d'Orcia! It is the ideal time for long walks and bike tours through the hills. The sun is warming, but the air is crisp, making outdoor activities even more energising.
At the ADLER Thermae in Tuscany the weekly programme includes five trekking and five guided e-bike tours. From this year, from 23 March 2025, the offer includes additional bike tours to create smaller groups with different routes according to levels of difficulty. A new tour takes us to discover the lesser-known Val d'Orcia, via the Strada del Pozzo, Gallina and Rimbecca, with long rows of over 500 cypress trees.
Among our nature treks there are some mouth-watering novelties: a walk with a collection of wild herbs that we will take to Fioretta’s farm to prepare tasty omelettes, ravioli stuffed with borage, fried wild fennel and appetisers garnished with mallow. While we cook together with a view of San Quirico d’Orcia, Fioretta also acquaints us with the ‘poor man's truffle’, the Jerusalem artichoke, and its thousand secrets.
The walk to Pienza includes a new visit to an innovative artisanal coffee roastery, where we stop to taste Made in Tuscany coffee blends roasted with cypress wood. Filippo knows how to advise everyone on the right blend, revealing unexpected aromas.
Like every year, in April we will go wild asparagus picking with Giulio, an unmissable event for many! We enjoy these tasty wild herbs with a final lunch in the Tenuta Sanoner.

The Sanoner Wine Estate introduced a new appointment every Wednesday afternoon: a walk through the vineyards to discover the particularities of biodynamic cultivation, explained by the producers themselves. In a grove adjacent to the vineyard, we also find a family of Cinta Senese pigs, an ancient native breed, reared in a semi-wild state. Insects and animals play an important role on Demeter biodynamic farms. Once in the cellar, a real technical tasting guided by a sommelier with organoleptic analysis of the Aetos wines awaits us - a real highlight for wine lovers!
